The ingredients :
- 1/2 cup butter
- 1 teaspoon Vanilla
- 3 eggs
- pinch salt
- 3/4 cup caster suger
- 1/2 cup milk
- 1 1/2 cup self raising flour
- 2 cups icing sugar
- 1/3 cup cocoa
- 1 teaspoon vanilla
- 1 big tablespoon butter
- Hot water to make a very runny icing
- 3 cups coconut
Steps for preaparation:
- Cake : cream suganr & butter ,then beat in vanilla & eggs
- gradually mix in flour and milk, pour into lamington tin (rectangle) bake for 30 minutes. in moderate oven
- Icing: mix all ingredients with hot water to thin runny icing.
- Finally, cut cake into square, coat well in watery icing and then cover with coconut.this bit is a bit fiddly I use a fork.
- you can freeze it if you want
